Basic Roasted Pumpkin Seeds
Bake seeds at 350F for 30 minutes. Toss with salt and roast at 350F for about 15 minutes.
To make any of the below (excluding Candied Pumpkin Seeds): Bake raw seeds at 350F for 30 minutes. Toss with seasoning and roast at 350F for about 15 minutes.

Mole Spiced Roased Pumpkin Seeds
2 cups dried Basic Roasted Pumpkin Seeds
3 tbsp brown sugar
1 tsp cinnamon
1 tbsp ancho chili powder
3 tbsp cocoa
1 tbsp finely ground coffee (not instant coffee)
2 tbsp butter, melted
1/2 tsp coarse salt
Sweet and Salty Roasted Pumpkin Seeds
2 cups Basic Roasted Pumpkin Seeds
2 tbsp melted butter
3 tbsp brown sugar
1/2 tsp coarse salt
1/2 tsp cinnamon
Spicy Herbed Roasted Pumpkin Seeds
2 cups Basic Roasted Pumpkin Seeds
1 tbsp chipotle powder
1/2 tbsp onion powder
2 tbsp sesame oil
1 tbsp dried parsley
1/2 tsp coarse salt
Candied Pumpkin Seeds
1 cup natural, raw, shelled pumpkin seeds
3 tbsp sugar
1/2 tsp salt
Spray a large baking sheet with cooking spray. Heat seeds in a medium saucepan over meduim heat, stirring frequently, 5 minutes, or until the seeds begin to pop.
Add sugar and stir constantly, about 1 minute, or until sugar begins to liquify and caramelize. Add salt. Spread seeds on prepared baking sheet and cool.
